Kappo (割烹) means “to cut and cook.” A traditional Japanese style where chefs prepare seasonal, ingredient-driven dishes right before your eyes.

Tsan (詹) is Chef David’s Taiwanese family name.

Kappo Tsan takes you through our journey of blending Japanese craftsmanship with Taiwanese soul to create dishes that are personal, poetic, and seasonal.
